Solid Background Export and Shadow Questions

Sorry in advance these two questions have no correlation to each other!

1. Is there a way to render or export with a specific solid color background so I don't have to export transparent and then layer it in photoshop?

2. Is there a way to maintain the shininess of a material and blend the shadows/highlights more without diffusing the material?

No but you can load a solid color image as a Static Background.

I am not understanding #2 very well but I would say no as everything works together and affect each other when one changes the others do too.

for #2 I am rendering a glossy material and the highlights just seem very "blocky" I guess. Like they aren't meshing well with each other. It could just be the material and I need to fiddle around with others.

The problem with this is that "shine" in your case, has nothing but black to shine so it obviously will not look natural as in everyday life in a kitchen with a lot of different objects and shades to shine. Shine is like reflection but act as the shine you have on glass. If you load an Environment Map of a kitchen for example, then the shines will look very good.
